Sweet Potato and Spinach Pancakes

   – Ingredients:

     – 1 cup sweet potatoes, cooked and mashed

     – 1/2 cup fresh spinach, finely chopped

     – 1 egg

     – 2 tablespoons whole wheat flour (optional)

   – Instructions:

  1. In a bowl, combine mashed sweet potatoes, chopped spinach, egg, and flour (if using).
  2. Mix until well combined.
  3. Heat a non-stick skillet over medium heat and lightly grease with oil.
  4. Spoon small portions of the mixture onto the skillet to form pancakes.
  5. Cook for 2-3 minutes on each side or until golden brown.
  6. Let cool and serve.
