Spinach and Cheese Quesadillas
– Ingredients:
– 2 small whole wheat tortillas
– 1/2 cup fresh spinach, finely chopped
– 1/4 cup shredded cheddar cheese
– Instructions:
- Place one tortilla in a non-stick skillet over medium heat.
- Sprinkle half of the shredded cheese on one half of the tortilla.
- Add the chopped spinach on top of the cheese.
- Fold the tortilla in half, covering the filling.
- Cook for 2-3 minutes on each side or until the cheese is melted and the tortilla is crispy.
- Allow to cool and slice into small, baby-friendly wedges.
