Quinoa and Vegetable Patties

   – Ingredients:

     – 1 cup cooked quinoa

     – 1/2 cup mixed vegetables (e.g., carrots, peas, corn), finely chopped

     – 1 egg

     – 2 tablespoons breadcrumbs

   – Instructions:

  1. In a bowl, combine cooked quinoa, chopped vegetables, egg, and breadcrumbs.
  2. Mix until the mixture holds together.
  3. Form into small patties.
  4. Heat a skillet with a bit of oil over medium heat.
  5. Cook the patties for about 3-4 minutes on each side or until golden brown.
  6. Allow to cool and serve.
